Prune and red wine sauce

Method

  1. In a saucepan gently heat wine until lukewarm, add chopped prunes and set aside to soak prunes. In another saucepan melt the butter, add chopped onion and sweat until soft. Add wine / prune mixture, blend until smooth, pass through a fine-meshed sieve, season to taste. Adjust thickness according to preference. If preferred, add cream or crème fraiche before serving.
