Almond – chive sauce
Ingredients
- 100 g ground almonds
- 2 handful fresh chives, finely cut
- 5 garlic cloves, finely chopped
- 50 ml milk
- 2 tsp prepared mustard
- 1 tsp caster sugar
- 100 ml olive oil (or rapeseed oil)
- 100 g Greek yogurt
- salt
Method
- In a dry frying pan over low heat, roast ground almonds until golden, set aside to let cool. Combine milk, chives, garlic, sugar and mustard. Blend to a smooth consistency. Carry on blending (or whisking vigorously) while slowly adding the oil until a creamy sauce is formed. Add yogurt and almonds, mix well, season with salt.
