Avocado – broccoli puree
Ingredients
- 200 g broccoli, prepared
- 2 garlic cloves, finely chopped
- 2 avocados, peeled, stoned, chopped
- 3 tbsp lemon juice
- large handful of watercress leaves, shredded
- salt, pepper
- 1 buffalo mozzarella (or burrata)
Method
- In a saucepan, bring salted water to the boil. Add broccoli, cook (or steam) for 10 minutes until soft, drain, seat aside to let cool. Combine with avocado, lemon juice and garlic. Blend to a smooth consistency, pass through a fine-meshed sieve, season to taste. Cut mozarella (or burrata) into small cubes, fold into the broccoli/avocado puree before serving.
