Avocado – cucumber soup
Ingredients
- 400 g cucumber, seeds removed, chopped
- 1 ripe avocado, peeled, cored, chopped
- spritz of lime (or lemon) juice
- 3-4 spring onions, prepared and chopped
- 150 g Greek yogurt
- small handful of fresh mint (or dill, or coriander) leaves
- salt
Method
- Blend all ingredients to a smooth consistency, pass through a fine-meshed sieve. Adjust thickness as preferred, season to taste. Serve chilled
