Avocado - basil sauce
Ingredients
- handful of basil leaves
- 1 garlic clove, chopped
- 1 ripe avocado, peeled, cored and chopped
- 1 tbsp lemon or lime juice
- 150 ml double cream
- 75 ml milk
- 1 tsp caster sugar
- salt, white pepper to taste
Method
- Mix prepared avocado pieces with lemon (or lime) juice to prevent them turning brown. Add basil leaves, garlic, sugar, cream and milk and blend mixture to a smooth consistency. Pass through a fine-meshed sieve, season to taste. Adjust thickness as preferred. Serve chilled.
