Avocado - broccoli puree
Serve with finely diced mozzarella cheese – preferably burrata or mozzarella di buffala, if you can find it – a good flavour combination.
Ingredients
- 200 g broccoli, prepared and steamed or cooked
- 2 garlic cloves, finely chopped
- 2 ripe avocados, peeled and stoned, chopped
- handful of watercress
- spritz of lemon juice
- salt, white pepper
Method
- Mix prepared avocado pieces with a little lemon juice. Add garlic, broccoli, watercress and seasoning. Blend to a smooth consistency, pass through a fine-meshed sieve, check for seasoning.
