Avocado ice cream
Ingredients
- 3 ripe avocados
- juice of 1 lemon
- 350ml cream of coconut
Method
- Peel, stone and chop the avocados. Toss in lemon juice and finely puree. Mix with the coconut cream. Freeze for ca. 3 hours. Move from freezer to fridge for about 30 minutes to one hour before serving.
