Avocado mousse I
If a mixture of food textures is not a problem, serve with some good quality smoked salmon; a very good flavour combination. If that is not an option, also tastes good on its own.
Ingredients
- 4 spring onions, prepared and chopped
- handful of watercress leaves
- 2 ripe avocados, peeled cored and chopped
- 100 g Philadephia (or other) cream cheese
- 1 tsp prepared mustard
- 1 tsp runny honey
- 1 tbsp white aceto balsamico (which is not acidic)
- 100 ml whipping cream, whipped
- salt, white pepper
- ½ sachet powdered gelatin
Method
- In a small saucepan, sprinkle gelatin over a little water, set aside and let soak.
- Combine avocado, watercress, spring onions, cream cheese, mustard, honey and white balsamico. Blend to a smooth consistency, season to taste. Dissolve soaked gelatin and slowly add to avocado mixture while whisking. Pass mixture through a fine-meshed sieve. Fold in whipped cream. Refrigerate for several hours until set. Serve chilled.
