Avocado mousse II
Ingredients
- 1 ripe large avocado, peeled, cored and chopped
- 1 tbs lime (or lemon) juice
- 100 ml coconut milk, unsweetened
- 100 ml cream, whipped
- pinch of salt
- ½ sachet powdered gelatin
Method
- In a small saucepan, sprinkle gelatin over a little water, set aside and let soak. Combine avocado, lime juice and coconut milk, blend until smooth. Pass through a fine-meshed sieve, season to taste. Dissolve soaked gelatin and slowly add to avocado puree while whisking. Fold in whipped cream. Refrigerate for several hours until set. Serve chilled.
