  1. In a small saucepan, sprinkle gelatin over a little water, set aside and let soak. Combine avocado, lime juice and coconut milk, blend until smooth. Pass through a fine-meshed sieve, season to taste. Dissolve soaked gelatin and slowly add to avocado puree while whisking. Fold in whipped cream. Refrigerate for several hours until set. Serve chilled.
