Banana – espresso sauce

This sauce is neither sweet nor savoury, it works for many different dishes in need of lubrication. If you feel like giving pasta a try, this is a good sauce for such an attempt.

  1. In a saucepan, bring 150 ml cream and sugar to the boil, add the espresso beans. Remove from heat, cover and let infuse for several hours (or overnight).
  2. Remove coffee/espresso beans, add chopped banana to the coffee-infused cream. Blend to a smooth puree. If you like the flavour of fresh mint but not the bits, add mint leaves before blending. If you don’t mind the bits, add shredded mint leaves to the sauce before serving – and if you don’t like mint, just omit. Fold whipped cream into sauce before serving.
