Basil – garlic sauce
Ingredients
- large bunch of basil, leaves only
- 250 g quark
- 2-3 tbsp good-quality mayonnaise
- finely grated zest of ½ unwaxed lemon
- 2 garlic cloves, peeled and finely chopped
- salt, white pepper to taste
- a few tbsp of milk
Method
- Chop basil leaves, add finely chopped garlic, lemon zest and just enough milk for blending the mixture to a smooth consistency. Pass through a fine-meshed sieve into a bowl, add quark and mayonnaise, mix well, season to taste.
