Basil - buttermilk soup
Very easy and quick to prepare, this aromatic cold soup can also be enjoyed with a sore mouth or throat.
Ingredients
- small handful of washed and finely chopped white parts of leek
- large bunch of fresh basil
- 500 ml buttermilk
- salt, white pepper to taste
- spritz of lemon juice
Method
- Blend prepared leeks, roughly chopped basil leaves and buttermilk to a smooth green soup, pass through a fine-meshed sieve. Season to taste with a little salt and pepper, and a spritz of lemon juice (if liked). Serve chilled.
