Basil - buttermilk soup

Very easy and quick to prepare, this aromatic cold soup can also be enjoyed with a sore mouth or throat.

  1. Blend prepared leeks, roughly chopped basil leaves and buttermilk to a smooth green soup, pass through a fine-meshed sieve. Season to taste with a little salt and pepper, and a spritz of lemon juice (if liked). Serve chilled.
