Beetroot sauce
Ingredients
- 200 g beetroot, pre-cooked, chopped
- generous knob of butter
- 150 ml whipping cream
- salt and white pepper
Method
- Melt butter in saucepan, add beetroot pieces and cook over low heat for 5 minutes, stirring. Add cream, bring to the boil, cook for another 5 minutes. Remove from heat, blend to a smooth consistency, pass through a fine-meshed sieve, season to taste, adjust consistency as preferred.
