Beetroot smoothie
Ingredients
- 150 g Greek yogurt
- 150 ml whole milk (or buttermilk or cream)
- grated zest of ½ lemon
- salt and white pepper to taste
- 3 tbsp cooked beetroot, chopped
- 3 tbsp chopped pear
- handful of lamb’s lettuce (or handful of other chopped tender salad leaves)
Method
- Combine all ingredients and puree together, strain. Serve chilled.
