Bread soup
This recipe can double up as a sauce if prepared in a thicker consistency.
Ingredients
- 1 shallot, fine chopped
- 1 stale bread roll (1 day old), chopped
- 50 g butter
- 400 ml beef stock
- 100 ml cream
- salt, white pepper
Method
- In a saucepan, melt butter over medium heat, add shallot and bread cubes, roast until golden. Add stock and cream, reduce heat and simmer for 20 minutes. Remove from heat and blend to a smooth consistency, pass through a fine-meshed sieve. Adjust thickness as preferred, season to taste.
Variations
If spicy food is not a problem, add 2 tbsp of grated horseradish when adding stock and cream.
