Broccoli bake
Ingredients
- 500 g broccoli, prepared and chopped
- 150 g crème fraiche
- pinch of ground nutmeg
- salt, white pepper
- 80 g Parmesan, finely grated
- knob of butter
Method
- Grease a shallow baking dish with butter, set aside. Preheat oven to 220 °C.
- In a saucepan, bring salted water to the boil. Add broccoli and cook for 5 minutes. Remove from heat. Drain and reserve some of the cooking water, about a cup. Blend cooked broccoli to a smooth puree. Transfer puree into greased baking dish. In a bowl, mix crème fraiche, salt, pepper, nutmeg and some of the cooking water. Pour over the broccoli puree. Sprinkle surface with Parmesan. Bake for 15 to 20 minutes.
