Broccoli bake

  1. Grease a shallow baking dish with butter, set aside. Preheat oven to 220 °C.
  2. In a saucepan, bring salted water to the boil. Add broccoli and cook for 5 minutes. Remove from heat. Drain and reserve some of the cooking water, about a cup. Blend cooked broccoli to a smooth puree. Transfer puree into greased baking dish. In a bowl, mix crème fraiche, salt, pepper, nutmeg and some of the cooking water. Pour over the broccoli puree. Sprinkle surface with Parmesan. Bake for 15 to 20 minutes.
