Broccoli ‘burger’
If broccoli puree does not sound too tempting for the dinner menu, perhaps gently fried little broccoli burgers have more appeal. Particularly nice served with a cheese sauce or some yogurt dip for added flavour and lubrication, or simply drizzled with some pumpkin seed oil. These little burgers provide carbohydrates and protein, as well as a surprisingly high calory count.
Ingredients
- 500 g broccoli, steamed until very soft (or cooked in salted water, well drained)
- 1 garlic clove, fine chopped
- 2 eggs
- 50 g plain flour
- 100 g fine breadcrumbs
- 1 tsp dried thyme
- salt, white pepper
Method
- Blend broccoli and garlic to a smooth puree. Add eggs, flour, breadcrumbs and thyme, mix well. Season to taste. Form small flat burgers (makes about six burgers). In a large frying pan, gently heat rapeseed oil and a knob of butter. Add the broccoli burgers and cook for a couple of minutes. Turn carefully (these little burgers are quite delicate) and cook on the second side for a few more minutes.
