Broccoli flan
Ingredients
- 250 g broccoli, prepared
- 125 ml vegetable stock
- 1 shallot, finely chopped
- 3 eggs, slightly beaten
- 50 ml cream
- 3 tbsp Greek yogurt
- salt, white pepper
- pinch of ground nutmeg
- knob of butter
Method
- Grease small oven-proof ramekins with a little soft butter, set aside. Preheat oven to 120 °C.
- In a small saucepan, melt a little butter and sweat shallot until soft, a few minutes. Remove from heat, set aside.
- Cook broccoli in vegetable stock unit soft, remove from heat, drain and add soften shallot, mix well. Blend to a smooth puree, add nutmeg, mix well, set aside.
- In a bowl, slightly beat eggs, add cream and yogurt, mix well, season with salt and pepper. Add broccoli mixture, mix well. Transfer to ramekins and cook for about 30 to 40 minutes until set (the flan surface feels wobbly when probing with finger).
