Broccoli frittata
Ingredients
- 400 g pre-cooked broccoli in small pieces (or mixture of broccoli and cauliflower)
- generous knob of soft butter
- 4 eggs
- 100 ml milk (or single cream)
- salt, white pepper to taste
- handful of finely grated cheddar or Gruyère cheese
Method
- Generously grease shallow baking dish with soft butter, add vegetable pieces and spread out in one layer. Preheat oven to 180 °C. In a bowl whisk eggs, milk and seasoning, pour over vegetables. Sprinkle top with grated cheese. Bake for 40 minutes.
