  1. In a large saucepan bring salted water to the boil, add broccoli pieces and cook for 5 to 6 minutes, until soft. Remove broccoli from cooking water, place in a bowl, add garlic, parsley leaves and grated cheese. Blend to a smooth consistency, while adding the oil in small portions. Pass through a fine-meshed sieve, season to taste.
