Broccoli ‘pesto’
Ingredients
- 1 large head broccoli, prepared, divided into pieces
- 1 garlic clove, peeled and chopped
- 1 bunch flat-leaf parsley, leaves only
- 100 ml (olive) oil
- 100 g finely grated Pecorino or Parmesan
- salt, pepper to taste
Method
- In a large saucepan bring salted water to the boil, add broccoli pieces and cook for 5 to 6 minutes, until soft. Remove broccoli from cooking water, place in a bowl, add garlic, parsley leaves and grated cheese. Blend to a smooth consistency, while adding the oil in small portions. Pass through a fine-meshed sieve, season to taste.
