Broccoli puree

If liked, serve with poached fish or with smoked trout fillet.

  1. In a saucepan, heat oil over moderate heat. Add broccoli and garlic, sweat for a few minutes. Add lemon zest, salt and pepper. Add stock, bring to the boil, reduce heat slightly, simmer for about 10 minutes until broccoli is soft. Remove from heat, add parsley, blend to a smooth consistency. Add Parmesan (if used), mix well.
