Broccoli sauce
Ingredients
- 400 g broccoli, prepared and chopped
- 1 onion, fine chopped
- 1 small green pepper, prepared and finely chopped
- generous knob of butter
- 300 ml vegetable (or chicken, if preferred) stock
- 100 ml single cream
- salt, white pepper to taste
Method
- In a saucepan melt butter over moderate heat, add onion, green pepper and broccoli and sweat for a few minutes. Add stock, bring to the boil and cook for about 15 to 20 minutes, until all vegetables are soft. Remove from the heat, blend to a smooth consistency, pass through a fine-meshed sieve. Add cream and adjust thickness according to preference, season to taste. Reheat if it is to be served hot.
