  1. In a saucepan melt butter over moderate heat, add onion, green pepper and broccoli and sweat for a few minutes. Add stock, bring to the boil and cook for about 15 to 20 minutes, until all vegetables are soft. Remove from the heat, blend to a smooth consistency, pass through a fine-meshed sieve. Add cream and adjust thickness according to preference, season to taste. Reheat if it is to be served hot.
