Buttermilk cucumber soup
Refreshing, no cooking required – and best enjoyed on a sunny summer day, in the garden.
Ingredients
- 1 cucumber, peeled, deseeded, chopped
- 3 spring onions, prepared and chopped
- 1 garlic clove, finely chopped
- 500 ml buttermilk
- 100 g soured cream
- salt, white pepper
- pinch of sugar
- spritz of lemon juice
- handful of fresh basil leaves, shredded
Method
- Combine all ingredients, blend to a smooth consistency. Pass through a fine-meshed sieve, adjust thickness as preferred, season to taste. Refrigerate for a couple of hours, serve chilled.
