Carrot miso sauce
A surprisingly umami-rich flavour and a great lubricant.
Ingredients
- 2 shallots, finely chopped
- 4 garlic cloves, finely chopped
- rapeseed oil
- 3 (medium) carrots, prepared and thinly sliced
- 200 ml (mineral) water
- 3 tbsp cashew nuts, chopped
- salt, white pepper
- 3 tbsp white miso paste
Method
- In a saucepan, heat some oil over moderate heat. Add shallot and garlic, sweat for a few minutes while stirring. Add carrots and cashew nuts, sweat for a few minutes more. Add water and seasoning, bring to the boil. Cover, reduce heat and simmer for 20 minutes until carrot pieces are soft. Remove from heat, add miso paste, mix well. Blend to a smooth consistency, pass through a fine-meshed sieve, adjust thickness as preferred, season to taste.
Variations
Replace carrots by broccoli or cauliflower.
