Chicken and apricot puree

  1. Gently fry the prepared chicken breast, apricots and shallot in a little oil for a few minutes. Barely cover with water, add cinnamon stick, simmer (uncovered) for about 20 minutes until meat and apricots are very soft and the liquid has turned syrupy. Remove the cinnamon stick and blend mixture to a smooth puree. Pass through a sieve and adjust thickness with some chicken stock or cream as required, season to taste.

Variations

Replace the dried apricots by a ripe pear, peeled, cored and chopped.
