Chicken and rocket puree
Ingredients
- 1 unwaxed orange, zest finely grated
- 300 g chicken breast, deboned and deskinned, cubed
- rapeseed oil (or olive oil, if preferred)
- salt, white pepper
- 50 ml (approximately) chicken stock
- large handful of rocket, prepared and finely shredded
Method
- In a saucepan, heat oil over moderate heat. Add chicken, salt, pepper and orange zest, mix well. Add chicken stock, cover and simmer for 15 minutes until meat is tender. Remove from heat. Remove meat from cooking liquid, blend to a smooth puree with about half the cooking liquid and adding cooking liquid or more chicken stock as needed for preferred consistency. Add rocket and blend again (if a smooth puree is preferred), or just mix in (if ‘bits’ are not a problem), season to taste.
