Chickpea - mushroom puree
Ingredients
- 150 g mushrooms, prepared and sliced
- 100 g chickpeas (tinned), rinsed and drained
- 1 white onion, finely chopped
- 1 garlic clove, finely chopped
- 6 tbsp rapeseed oil
- salt, white pepper
Method
- Heat two tbsp oil in frying pan, add mushrooms, onion and garlic, cook over moderate heat until softened and lightly browned, season, remove from heat. Add drained chickpeas and four tbsp oil, blend to a smooth consistency, pass through a fine-meshed sieve and check seasoning.
