  1. In a small saucepan, sprinkle gelatin over a little water, set aside to soak. In a saucepan, bring cream, sugar and vanilla paste to the boil, reduce heat and simmer for 30 minutes. In a small bowl, whisk milk, chocolate syrup and cocoa powder to a smooth consistency. Bring cream back to the boil, slowly add chocolate mixture while whisking. Remove from heat. Dissolve gelatin, add to cream/chocolate mixture while whisking. Set aside to cool. Stir in mascarpone, mix well (with a whisk). Refrigerate overnight.
