Chocolate - pear - semolina pudding
A versatile and convenient staple food – below just one of endless variations is described. There is versatility for flavours as well as texture – everything goes from savoury to sweet, from smooth (using fruit or vegetable purees) to soft with texture (using soft vegetable or fruit pieces). The chocolate - pear - semolina variety is a firm favourite with children.
Ingredients
- 400 ml milk
- 40 g semolina
- 1 tsp cocoa powder (unsweetened)
- 1 tsp caster sugar
- 1 ripe pear, peeled and cored; finely chopped or pureed
Method
- In a saucepan, bring milk to the boil. While whisking, add semolina, sugar and cocoa powder. Reduce heat and keep stirring for about 5 minutes. Remove from the heat, add pear, mix well.
Variations
Omit cocoa powder, instead use vanilla or cinnamon. Use any fruit, fruit puree you prefer. Use milk, semolina, a pinch of salt as the base for a savoury version with any vegetable sauce or puree. Also works well with a creamy cheese sauce. All variations taste good at all temperatures.
