Coconut milk jelly
Ingredients
- 400 ml coconut milk (unsweetened)
- 1 tbsp caster sugar
- 1 sachet powdered gelatin
- pinch of salt
- 1 unwaxed lime, finely grated zest
Method
- In a small saucepan, sprinkle gelatin over a little water. Set aside to soak.
- In a saucepan, bring coconut milk, sugar, lime zest and salt to the boil, remove from heat, pass through a fine-meshed sieve. Dissolve gelatin, add to the hot coconut milk mixture while stirring. Refrigerate for several hours (or overnight) until set.
