Method

  1. In a small saucepan, sprinkle gelatin over a little water. Set aside to soak.
  2. In a saucepan, bring coconut milk, sugar, lime zest and salt to the boil, remove from heat, pass through a fine-meshed sieve. Dissolve gelatin, add to the hot coconut milk mixture while stirring. Refrigerate for several hours (or overnight) until set.
