Coconut milk rice pudding
Serve with mango or pineapple puree, a great combination.
Ingredients
- 400 ml coconut milk (unsweetened)
- 600 ml milk
- pinch of salt
- 1 tbsp caster sugar
- 220 g pudding (short grai) rice
- 1 unwaxed lime (or lemon), finely grated zest
Method
- In a saucepan, bring milk, coconut milk, lime zest, pinch of salt to the boil. Add rice, bring back to the boil. Reduce heat and simmer over low heat for 40 minutes until rice is very soft, stir regularly to avoid burning. Remove from the heat, add sugar (if used), mix well.
