  1. In a saucepan, bring coconut milk, sugar, corn flour, vanilla paste, lime zest and 2 egg yolks to the boil, while whisking constantly. Continue to stir and cook for about 5 minutes until thickened, remove from heat. In a bowl, whisk egg whites with a pinch of salt, fold into coconut mixture. Refrigerate for several hours before serving.
