Coconut milk - vanilla mould
Ingredients
- 50 g caster sugar
- 1 unwaxed lime, finely grated zest
- ½ vanilla pod, seeds scraped out (or 1 tsp vanilla paste)
- 30 g corn flour
- 400 ml coconut milk
- 2 eggs, separated
- pinch of salt
Method
- In a saucepan, bring coconut milk, sugar, corn flour, vanilla paste, lime zest and 2 egg yolks to the boil, while whisking constantly. Continue to stir and cook for about 5 minutes until thickened, remove from heat. In a bowl, whisk egg whites with a pinch of salt, fold into coconut mixture. Refrigerate for several hours before serving.
