Courgette - almond puree
Ingredients
- 150 g courgettes, prepared and chopped
- 1 shallot, finely chopped
- 1 tsp ground turmeric
- 50 ml crème fraiche
- 2 tbsp rapeseed oil
- 2 tbsp almond paste
- 1 tbsp tahini
- ½ tsp ground cumin
- ½ tsp mild paprika
- 2 dried dates (preferably Medjool dates), chopped
Method
- In a frying pan, heat oil. Add shallot and courgette, cook over moderate heat until softened. Add turmeric and crème fraiche, mix well. Remove from heat and blend to a smooth consistency. Add all remaining ingredients, blend again, pass through a fine-meshed sieve. Check for seasoning, serve chilled.
