  1. In a frying pan, heat oil. Add shallot and courgette, cook over moderate heat until softened. Add turmeric and crème fraiche, mix well. Remove from heat and blend to a smooth consistency. Add all remaining ingredients, blend again, pass through a fine-meshed sieve. Check for seasoning, serve chilled.
