  1. In a saucepan, heat oil over moderate heat, add onion and garlic, sweat for a few minutes. Add courgette and marjoram, cook for 5 minutes. Add drained beans and cook for another 10 minutes, add lemon zest. Remove from heat, blend to a smooth consistency, pass through a fine-meshed sieve, season to taste.
