Courgette - white bean puree
Ingredients
- 1 courgette, medium size, finely chopped
- 1 shallot, finely chopped
- 1 garlic clove, finely chopped
- rapeseed oil
- 250 g white beans (tinned), rinsed and drained
- salt, white pepper
- 1 tsp dried marjoram
- 1 unwaxed lemon, finely grated zest
Method
- In a saucepan, heat oil over moderate heat, add onion and garlic, sweat for a few minutes. Add courgette and marjoram, cook for 5 minutes. Add drained beans and cook for another 10 minutes, add lemon zest. Remove from heat, blend to a smooth consistency, pass through a fine-meshed sieve, season to taste.
