Creamy honey - basil sauce
If you feel like giving pasta a try, perhaps with some small pasta shapes, this sauce is a very good candidate. It is also a tasty lubricant for many other dishes, at all temperatures.
Ingredients
- 2 large handfuls of basil leaves, roughly chopped
- 3 garlic cloves, chopped
- 3 tbsp pine nuts; slightly toasted (in a dry pan)
- 3 tbsp finely grated Parmesan cheese
- spritz of lemon juice
- 100 ml rapeseed (or extra-virgin olive) oil
- 3 tbps runny honey
- 300 ml whipping (or double) cream
- 150 ml chicken stock
Method
- Blend basil leaves, garlic, pine nuts, Parmesan, oil, honey and lemon juice to a smooth puree. In a saucepan heat cream and chicken stock, add basil puree and bring to the boil. Reduce heat slightly and simmer for about 30 minutes until sauce starts to thicken.
