Cucumber and garlic soup
Ingredients
- 1 cucumber, peeled and seeds removed, chopped
- 2 potatoes, peeled and chopped
- 1 small onion, finely chopped
- 2 garlic cloves, very finely diced
- knob of butter
- 500 ml vegetable stock
- salt, white pepper
- 100 g Greek yogurt to serve
Method
- Melt butter in saucepan and sweat cucumber, potatoes, onion and garlic. Add stock and simmer until vegetables are soft. Puree, strain, adjust thickness and season to taste. Serve with a dollop of yogurt on top.
