Cucumber - apricot lassi
Ingredients
- 2 ripe apricots, cored and chopped
- ½ cucumber, peeled, deseeded, chopped
- 250 g Greek yogurt
- 1 tsp salt
- 1 tsp ground cumin
- some lemon balm, coriander or tarragon leaves
- mineral water
Method
- Combine all ingredients, blend to a smooth consistency, pass through a fine-meshed sieve. Adjust thickness as preferred with mineral water. Serve chilled.
