Elderflower mousse
Serve with your favourite fruit puree or sauce.
Ingredients
- 400 g quark (or ricotta)
- 125 ml elderflower cordial
- 1 unwaxed lime, zest finely grated
- 1 tbsp lime juice
- 200 ml whipping cream, whipped
- 1 sachet powdered gelatin
Method
- In a small saucepan, sprinkle gelatin over a little water and set aside to soak. In a bowl, whisk quark, half of the elderflower cordial, lime zest and juice until smooth and creamy. Warm the remaining half of the cordial, dissolve the gelatin and add to the warm cordial while whisking. Slowly add the cordial-gelatin mixture to the quark while stirring constantly (to avoid lumps). Fold in whipped cream and refrigerate for several hours, or overnight, until set.
