Frozen cheesecake
Particularly nice when frozen as an ice lolly – the children will agree.
Ingredients
- ½ unwaxed lime (or lemon), finely grated zest
- 125 g cream cheese
- 125 g crème fraiche
- 75 ml whipping cream
- 2 tbsp caster sugar
- 1 tsp vanilla paste
- 2 tbsp strawberry jam
- 4 ramekins
Method
- In a bowl, whisk cream cheese and crème fraiche until well mixed. Add lime zest, sugar, vanilla paste and cream, mix well. Keep stirring until sugar is completely dissolved. Add strawberry jam, briefly mix for a marble effect. Transfer into small freezer-proof ramekins (or ice lolly forms), freeze overnight. Remove from freezer 20 minutes before serving.
