Ham and apple pancake
The amounts given in the recipe make 8 thin pancakes.
Ingredients
- 500 ml buttermilk
- 6 eggs
- 300 g plain flour
- pinch of salt
- 3 apples, peeled, cored and finely chopped
- 200 g cooked ham, very finely chopped
- 150 ml soued cream
- rapeseed oil
Method
- In a large bowl, slightly beat eggs, add buttermilk, mix well. Add a pinch of salt, add flour while whisking until combined. Set aside for about 30 minutes.
- Heat oil in a frying pan over moderate heat. Add some apple pieces and 2 tbsp ham pieces, cook for a couple of minutes while stirring.
- Give the pancake batter a quick whisk, and spoon about 1/8 of it into the frying pan. Swirl batter around for a thin and even cover, to give a thin pancake. Cook until golden-brown on the bottom, turn over and cook for a few more minutes on the second side. Keep warm between two plates in a low oven. Repeat procedure until all batter, apple cubes and ham pieces are used up. Serve with a dollop of soured cream.
