Honey parfait
Serve drizzled with honey, or with any fruit puree you like, also goes well with mashed banana.
Ingredients
- 3 egg yolks
- 2 eggs
- 270 g good quality honey
- 150 ml milk
- 250 ml whipping cream, whipped
Method
- Line a loaftin with clingfilm, set aside. Place metal bowl over a hot water bath, add egg yolks, eggs, honey and milk and whisk until mixture is pale and fluffy (may take 10 minutes, even with an electric whisk). Remove bowl from water bath, and let cool, while whisking occasionally. When completely cooled, fold in whipped cream. Transfer mixture to prepared loaftin, cover with clingfilm and freeze for several hours, or overnight. Remove from freezer 30 minutes before serving.
