Juniper berry sauce
Full of flavour, great with all kinds of vegetable purees, especially good with asparagus.
Ingredients
- 2 tbsp juniper berries, slightly crushed
- generous knob of butter
- 100 ml mineral water, sparkling
- 200 ml whipping cream
- 1 heaped tsp corn flour
- salt, pepper
Method
- In a saucepan, melt the butter and add the crushed juniper berries, sweat for a few minutes. Add mineral water and cream, bring to the boil. Reduce heat, simmer for 10 minutes, remove from heat, cover and set aside for several hours or overnight. Next day, mix corn flour with a little water, set aside. Pass sauce through a fine-meshed sieve into another saucepan, bring to the boil and add corn flour to the boiling sauce while whisking until sauce thickens slightly. Season to taste.
