Leek - smoked salmon bake

  1. Generously butter a flat oven-proof dish, set aside. Preheat oven to 180 °C. melt a knob of butter in a frying pan and sweat leek at moderate heat until soft, remove from heat and set aside to cool. Add salmon, egg, crème fraiche, a pinch of ground nutmeg and a spritz of lemon juice. Mix well, season to taste. Pour into baking dish and bake for 30 to 40 minutes until firmed but still wobbly. Remove from heat and let sit for a few minutes before serving. Tastes also good lukewarm and cold.
