Mango mousse
Ingredients
- ½ sachet powdered gelatin
- 1 unwaxed lime, zest finely grated
- 2 tbsp lime juice
- 500 g ripe mango, peeled and chopped
- 4 egg yolks
- 2 egg whites, whipped with a pinch of salt
- 30 g caster sugar
Method
- In a small saucepan, sprinkle gelatin over a little water, set aside to soak. Blend mango and lime juice to a smooth puree, set aside. Place a metal bowl over a hot water bath. Add egg yolks and sugar and whisk until pale and fluffy. Dissolve gelatin, add to egg mixture while whisking. Add mango puree and lime zest, mix well. Set aside to let cool, then fold in whipped egg whites. Refrigerate for several hours or overnight before serving.
