Marmalade parfait
Toast definitely not the only ‘platform’ for marmalade!
Ingredients
- 5 egg yolks
- 500 ml whipping cream, whipped
- 100 g caster sugar
- 4-5 tbsp bitter orange marmalade with chunks (also works with smooth marmalade)
- generous shot of Grand Marnier or Cointreau
- juice of 1/2 lemon (no worry, nothing sharp or sour detectable in parfait)
Method
- Line a loaftin with clingfilm, set aside. In a bowl, whisk yolks and sugar until pale and fluffy. Add marmalade and Grand Marnier, whisk/mix well (this will typically break down chunks in marmalade to small pieces, if that is a concern). Add lemon juice, mix again. Fold in whipped cream. Transfer to prepared loaftin, cover with clingfilm and freeze for several hours or overnight. Remove from freezer 20 min before serving.
