Melon – cream cheese mousse

Particularly nice when served with extra melon puree.

  1. Sprinkle gelatin over a small amount of water in a small saucepan, set aside to soak. Blend melon to a smooth puree, set aside. In a bowl, whisk cream cheese, mascarpone, caster sugar and cream until smooth and the sugar has dissolved. Dissolve the gelatin and add, while stirring, to the melon puree. Add melon puree to the cream cheese mixture, mix well. Fold in whipped cream. Refrigerate for several hours or overnight.
