Melon soup
A summer soup, taste good at all temperatures and is very good for soaking/softening bread.
Ingredients
- 600 g Galia (or similar) melon, prepared and chopped into rough cubes
- 1 onion, finely chopped
- 100 ml stock (chicken or vegetable)
- 100 ml single cream
- generous knob of butter
- salt, white pepper to taste
Method
- In a saucepan melt the butter over moderate heat. Add onion and melon, sweat for a few minutes, add stock and cream. Cover and simmer for 15 minutes. Remove from heat, blend to a smooth consistency, pass through a fine-meshed sieve, adjust thickness as preferred and season to taste.
