Melon soup

A summer soup, taste good at all temperatures and is very good for soaking/softening bread.

  1. In a saucepan melt the butter over moderate heat. Add onion and melon, sweat for a few minutes, add stock and cream. Cover and simmer for 15 minutes. Remove from heat, blend to a smooth consistency, pass through a fine-meshed sieve, adjust thickness as preferred and season to taste.
