Minced pork omelette
A tasty and clever way to have inbuilt lubrication for the minced pork, and added variety to the ‘omelette menu’.
Ingredients
- 1 shallot, finely chopped
- 2 garlic cloves, finely chopped
- small handful of coriander leaves, chopped
- 4 eggs, lightly beaten
- 150 g minced pork
- 2 tbsp corn flour (or rice flour)
- 2 tbsp soy sauce (or fish sauce, if preferred)
- white pepper
- rapeseed oil
Method
- In a bowl, add minced pork, corn flour and soy sauce to the lightly beaten egg, mix well with a fork. Add shallot, garlic and coriander, mix until everything is combined well.
- Heat a little rapeseed oil in a non-stick pan. Add half of the egg mixture, distribute evenly in the pan and cook for 2 to 3 minutes, turn and cook on the second side for another 2 to 3 minutes. Half of the egg mixture gives a medium-sized omelette. If a smaller omelette is preferred, use a smaller pan and about a quarter of the egg mixture for each omelette.
Variations
Replace minced pork by minced chicken or turkey.
