Minced pork omelette

A tasty and clever way to have inbuilt lubrication for the minced pork, and added variety to the ‘omelette menu’.

  1. In a bowl, add minced pork, corn flour and soy sauce to the lightly beaten egg, mix well with a fork. Add shallot, garlic and coriander, mix until everything is combined well.
  2. Heat a little rapeseed oil in a non-stick pan. Add half of the egg mixture, distribute evenly in the pan and cook for 2 to 3 minutes, turn and cook on the second side for another 2 to 3 minutes. Half of the egg mixture gives a medium-sized omelette. If a smaller omelette is preferred, use a smaller pan and about a quarter of the egg mixture for each omelette.

Variations

Replace minced pork by minced chicken or turkey.
