Mushroom bake
Ingredients
- 1 shallot, finely chopped
- 300 g mixed mushrooms, prepared and finely chopped
- 2 tbsp chives, finely chopped (optional)
- 4 eggs, separated
- 100 g Greek yogurt
- 150 ml milk
- 60 g plain flour
- knob of butter
- rapeseed oil
- salt, white pepper
- pinch of ground nutmeg
- 3 tbsp Parmesan, finely grated
Method
- Preheat oven to 200 °C.
- In a saucepan, heat oil over moderate heat. Add shallot, sweat for a few minutes. Add mushrooms and cook for 5 minutes, season to taste, set aside.
- In a bowl, whip the egg whites, set aside. In another bowl, whisk the egg yolks with a pinch of nutmeg, yogurt and milk until well mixed. Add flour and chives (if used), mix well. Fold in egg whites.
- Grease an oven-proof shallow dish with butter. Add egg mixture. Layer mushrooms on top, sprinkle with Parmesan. Bake for 15 to 20 minutes.
