Mushroom bake

Method

  1. Preheat oven to 200 °C.
  2. In a saucepan, heat oil over moderate heat. Add shallot, sweat for a few minutes. Add mushrooms and cook for 5 minutes, season to taste, set aside.
  3. In a bowl, whip the egg whites, set aside. In another bowl, whisk the egg yolks with a pinch of nutmeg, yogurt and milk until well mixed. Add flour and chives (if used), mix well. Fold in egg whites.
  4. Grease an oven-proof shallow dish with butter. Add egg mixture. Layer mushrooms on top, sprinkle with Parmesan. Bake for 15 to 20 minutes.
