Oatmeal chocolate pancakes
Not very sweet, and best served with some fruit puree. Apple sauce, mashed banana, peach puree all work well, or combine with custard. If you only have oat flakes at home, they can be easily ground to a flour in a food processor.
Ingredients
- 85 g oatmeal
- ½ tsp baking powder
- 1 tbsp cocoa powder (unsweetened)
- pinch of salt
- 120 ml milk
- 1 egg
- 3 tbsp butter
- 2 tbsp runny honey
Method
- In a bowl, mix oatmeal, baking powder, cocoa powder and salt. In another bowl, lightly beat the egg, add milk and honey, mix well. Melt a heaped tbsp of butter, add melted butter to the milk-egg mixture, mix well. Add mixture to the dry ingredients and mix well. Set aside for 30 minutes.
- In a frying pan, melt butter over moderate heat. Bake small individual pancakes in batches, a couple of minutes on each side.
Variations
Use plain wheat flour, or spelt flour.
